This is a great way to use up old bread, and the leftovers are amazing for the rest of the week. Feel free to reduce the number of egg yolks to make it more low-fat. Don’t go for light cheese, it won’t bake the same. Instead you could always opt for non-fat milk.
Just remember that you need to make this the morning *before* you want to eat it. On the bright side that means there’s no effort in the morning and you get to eat it warm out of the oven. On the down side, night = laziness. But it’s worth it!
